However, in the future, they will be used increasingly for synthesis. The advantages are that enzymes are selective, they are nonhazardous, and operating conditions are moderate. For example, S. aureus, a naturally occurring protease (enzyme), is used in a route to convert aspartic acid and phenylalanine methylester into aspartame. This use avoids the pretreatment needed to block a side reaction that forms a nonsweet product (Parkinson and Johnson 1989).
